But experts say that most people consume far too much of it, increasing their risk of high blood pressure and heart disease.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">In the United States, for instance, about <a class=\"css-yywogo\" href=\"https:\/\/www.cdc.gov\/mmwr\/volumes\/70\/wr\/mm7042a4.htm?s_cid=mm7042a4_w#T1_down:~:text=Most%20U.S,during%202015%2D2016.\" title rel=\"noopener noreferrer\" target=\"_blank\">95 percent of men and 77 percent of women<\/a> consume more than 2,300 milligrams per day, a limit federal health officials recommend.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">But in recent decades, <a class=\"css-yywogo\" href=\"https:\/\/www.nytimes.com\/2014\/08\/24\/opinion\/sunday\/the-debate-on-salty-foods-continued.html\" title>researchers have disagreed<\/a> about exactly how much sodium is too much, with some suggesting that <a class=\"css-yywogo\" href=\"https:\/\/www.nytimes.com\/2014\/08\/26\/upshot\/dash-of-salt-does-no-harm-extremes-are-the-enemy.html\" title>federal guidelines are too strict<\/a>. Those reports captured our attention and left many people confused, said Dr. Lawrence Appel, a professor of medicine at the Johns Hopkins University School of Medicine.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">But more recent research has clarified some of that murkiness, Dr. Appel said. We asked him and other experts to help set the record straight.<\/p>\n<\/div>\n<\/div>\n<div><\/div>\n<div class=\"css-s99gbd StoryBodyCompanionColumn\">\n<div class=\"css-53u6y8\">\n<h2 class=\"css-kypbrf eoo0vm40\" id=\"link-7f4bfc8b\">How does sodium affect health?<\/h2>\n<p class=\"css-at9mc1 evys1bk0\">Scientific studies from the last 50 years or so have shown a clear pattern: \u201cThe more salt we eat, the higher our blood pressure goes,\u201d said Cheryl Anderson, a professor of public health at the University of California, San Diego.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">In a <a class=\"css-yywogo\" href=\"https:\/\/www.ahajournals.org\/doi\/10.1161\/CIRCULATIONAHA.120.050371\" title rel=\"noopener noreferrer\" target=\"_blank\">2021 review<\/a> of 85 clinical trials, for example, scientists looked at what happened to people\u2019s blood pressure when they consumed 400 to 7,600 milligrams of sodium per day. As their consumption increased, the researchers reported, so did their blood pressure.
