I was raised on bowls of sugary cereal, mac and cheese and instant ramen. I still crave them.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">And that\u2019s by design, said Ashley Gearhardt, a professor of psychology at the University of Michigan. Dr. Gearhardt\u2019s <a class=\"css-yywogo\" href=\"https:\/\/pmc.ncbi.nlm.nih.gov\/articles\/PMC4334652\/\" title rel=\"noopener noreferrer\" target=\"_blank\">research<\/a> suggests that some UPF ingredients, like added fats and sugars, can activate the brain\u2019s reward centers in ways similar to those of <a class=\"css-yywogo\" href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/33448279\/\" title rel=\"noopener noreferrer\" target=\"_blank\">addictive substances<\/a> like alcohol and nicotine.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">\u201cThe more you have, the more you want,\u201d she said.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">So it\u2019s logical that we might prefer them to some less-processed foods. But when you stop to think about how different some seem from their whole-food counterparts, the temptation diminishes a little. Many of us don\u2019t pay close attention, though.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">\u201cMost UPFs aren\u2019t designed to be eaten mindfully,\u201d said Arielle Johnson, a flavor scientist and the author of \u201cFlavorama: A Guide to Unlocking the Art and Science of Flavor.\u201d A <a class=\"css-yywogo\" href=\"https:\/\/www.cell.com\/cell-metabolism\/fulltext\/S1550-4131(19)30248-7\" title rel=\"noopener noreferrer\" target=\"_blank\">small 2019 study<\/a> monitored people on both whole-food diets and ultraprocessed food diets.
