Here\u2019s what to know.<\/p>\n<h2 class=\"css-1u37br4 eoo0vm40\" id=\"link-59402ed6\">What is bone broth?<\/h2>\n<p class=\"css-at9mc1 evys1bk0\">Bone broth is made by simmering meaty bones for many hours, said <a class=\"css-yywogo\" href=\"https:\/\/www.nytimes.com\/2014\/04\/22\/dining\/video-brooklyn-bouillon.html\" title>Rachael Mamane<\/a>, the former owner of a small batch stock company called Brooklyn Bouillon and the author of the cookbook \u201cMastering Stocks and Broths.\u201d Often, cooks use bones from beef, pork or chicken, especially those with joints and with connective tissue still attached.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">It\u2019s similar to other types of <a class=\"css-yywogo\" href=\"https:\/\/cooking.nytimes.com\/recipes\/1018861-pressure-cooker-bone-broth-or-chicken-stock\" title>broth or stock<\/a> in terms of ingredients and taste, and any of them can be a base for soups or stews.
