Legumes \u2014 a category of vegetables rich in protein, vitamins and minerals \u2014 were an easy way to accomplish the goal.<\/p>\n<p class=\"css-at9mc1 evys1bk0\">She whipped up meals like sweet-and-sour tofu, black-bean tacos and tofu stir-fry.
